For vegetarians

Vegetarian dishes are rather hard to be found in Cyprus and person who does not eat meat may have to make an effort in order to get vegetarian food. The best solution for those who avoid eating meat is to try meze which usually does not contain meat – it is a mixture of hummusu, tahini, fried cheese, olives and other delicacies. Most of the dishes are served with salads which are the mixture of different sesonal vegetables. Most of the dishes, the salads also, are spiced with the most popular herb in Cyprus – cilantro. Very interesting, also for those who like eating meat, may be the marinated capers with the thorns, wide range of olives with peppers or almonds, broad bean puree used for making soups, as well as soups and puree made of wheat grains steeped in yoghurt. Instead of potato Cypriot people often use the taro roots.
